Even though I am a gym rat, I seriously struggle with eating well. I crave carbs and sweets – not veggies. So when it comes to losing weight, food is my biggest challenge. I love that sites like Pinterest and Instagram can inspire me to try new things! Recently, someone I follow on Instagram posted a picture of a broccoli salad, so I thought I would take a stab at a recipe of my own. When I try new things, I hardly ever follow recipes. So this was a creation all of my own, with some inspiration from jazzythings on Instagram (She is awesome, by the way – follow her!). I honestly do not like broccoli at all, unless it’s smothered in cheese sauce or mixed in some delicious Chinese food – so the fact that I like this salad says something!
- 4-1/2 cups chopped broccoli
- 1/2 onion, diced
- 1 cup diced heirloom tomatoes
- 3-4 sliced of cooked/crumbled bacon
- 1/2 cup shredded cheese
- 1/4 cup slivered almonds
- 3-4 fresh basil leaves
- 1/2 cup full-fat Greek yogurt
- 1 tbsp apple cider vinegar
- 2 tsp sugar
- Paprika, salt, and pepper to taste
To begin, mix the broccoli, onion, tomatoes, basil, cheese, and almonds in a large bowl. In a smaller separate bowl, stir the Greek yogurt, vinegar, and sugar. Pour over the broccoli mixture and stir evenly to coat. Add paprika, salt, and pepper as needed to taste. Serve immediately.
This is a great, light side dish, perfect for summer cookouts, or just a side when grilling out at home! Enjoy!
