Has it really been almost 3 months since I posted? Wow! Promise to try to do better from now on! In the meantime, here’s a quick recipe that I made tonight! It’s variation of stuffed peppers I make with quinoa instead of rice. Read on for the recipe!

Ingredients:

  • Bell peppers (any color will do – I used 2)
  • 1/2 lb ground beef
  • 1/2 cup white quinoa (dry)
  • 1 cup spinach
  • 1/4 diced onion
  • 2-3 cloves garlic, diced
  • 1/2 cup diced tomatoes
  • 1/2 tbsp paprika
  • 1/2 tbsp crushed red pepper
  • Salt and pepper to taste
  • Any other veggies or spices you’d like!
  • Mozzarella to top (optional)

Preheat oven to 350°F. Cut the tops off of the bells peppers and scoop out the seeds inside. Rinse well. (Note: If you’d like a softer pepper, you can parboil them for a few minutes). In the meantime, cook the quinoa as directed. Brown ground beef with onion and garlic. Once cooked, add in tomatoes, spinach, and spices and continue to simmer. When the quinoa is cooked, add to the beef mixture and simmer until most of the liquid is absorbed. Place the bell peppers into a baking pan. Top with cheese if desired. Bake 10 minutes. Let them sit for a few minutes before serving. This made 2 peppers and I had some filling leftover! Enjoy!
