I love to bake. I tend to bake a lot more when it’s cold outside, so today I made oatmeal flax cookies. These are so good and buttery, and the flax adds a nice nutty flavor (and fiber!). Bonus is that they’re very easy to make!
- 1 cup unsalted butter, softened to room temperature
- 1 cup brown sugar, packed
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups rolled oats
- 3 tbsp ground flax seed
Preheat oven to 350°F. Cream butter and brown sugar in large bowl. Add vanilla and egg. Beat until well blended. Add flour, baking soda, and salt. Continue to mix until no dry flour remains. Add in oats and flax seeds. Mix well. Drop 1 tbsp each onto greased cookie sheet. Place about 2 inches apart. Bake 8-10 minutes, until golden brown.
Today I made these as is, but I want to try with some additional mix-ins next time. Maybe dried cranberries, chocolate chips, or even white chocolate chips. What other mix-ins would be good? Leave me a comment!
